Soy Protein Products

The four soy protein products commonly used as food ingredients are soy flour, soy protein concentrate, soy protein isolate, and textured soy protein (not shown in the figure). Defatted soy flour contains about 50 percent protein, concentrate about 70 percent, isolate about 90 percent, and textured soy varies from 50 to 70 percent. The protein in the soy flour, concentrate and isolate is the same protein as in the whole soybean (soybean contains about 40 percent protein) but it has been concentrated by the removal of the other non-protein portion of the soybean.
